Paco apareci\u00f3 con una botella cubierta de polvo y m\u00e1s o menos medio llena de un l\u00edquido oscuro y denso. Nos sirvi\u00f3 una cantidad muy medida, menos de un cent\u00edmetro a cada uno. Olor intenso y complejo. Color oscuro, parecido a caoba. Flujo denso. Y un sabor \u00fanico, como miel, concentrado pero limpio. Lo que se puede definir como la esencia de este vino generoso, que en este caso ten\u00eda unos ochenta a\u00f1os, seg\u00fan Paco. No s\u00e9 si todav\u00eda le quedar\u00e1 algo.<\/p>\n<p>Pedro Xim\u00e9nez es una variedad de uva blanca cultivada principalmente en Andaluc\u00eda, sobre todo en las zonas de Montilla-Moriles en la provincia de C\u00f3rdoba y en el entorno de Jerez de la Frontera en C\u00e1diz, y en mucho menor grado en M\u00e1laga, Castilla la Mancha, Catalu\u00f1a e incluso, Canarias. Es una de las tres variedades de uva empleadas para la elaboraci\u00f3n de los vinos generosos, de los cuales los Jerez (Xerez o Sherry) ocupan el lugar principal. Los m\u00e1s conocidos generosos son el Fino, Manzanilla, Amontillado y Oloroso, sin olvidar Palo Cortado, generosos de licor Pale Cream, Medium y Cream y, por supuesto, los vinos dulces naturales Moscatel y Pedro Xim\u00e9nez.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-651\" src=\"https:\/\/lavidaiberica.com\/wp-content\/uploads\/2018\/04\/Botella-PX.jpg\" alt=\"\" width=\"3008\" height=\"2000\"><\/p>\n<p>El vino de Pedro Xim\u00e9nez es el producto de un proceso de elaboraci\u00f3n algo complejo. Despu\u00e9s de la cosecha, se colocan las uvas sobre una superficie plana expuesta al sol durante varios d\u00edas. De esta forma, las uvas van sec\u00e1ndose y los az\u00facares naturales y las aromas se intensifican y se quedan como pasas. Despu\u00e9s de este periodo de secado, se las llevan a prensar enteras, tomando el primer tercio del mosto para elaborar el Jerez. El mosto resultante es muy rico en az\u00facar. Este mosto es colocado en barricas o botas de roble americano para su fermentaci\u00f3n. Las botas est\u00e1n colocados en pilas de tres alturas, con las m\u00e1s recientes arriba de todas. Ahora es cuando aparece una especie de l\u00e1mina compuesta de levaduras naturales llamada \u201cvelo o flor\u201d. Esta l\u00e1mina protege el vino de la oxidaci\u00f3n y a la vez facilita la fermentaci\u00f3n y el desarrollo de las caracter\u00edsticas particulares de los vinos de Jerez. Posteriormente se a\u00f1ade alcohol v\u00ednico para interrumpir o impedir la fermentaci\u00f3n, para conseguir un nivel alcoh\u00f3lico en el entorno de 8,5 a 9%. Se hace un trasvase de un tercio desde las botas m\u00e1s altas hac\u00eda las del nivel intermedio, mezcl\u00e1ndose con el contenido de \u00e9stas, que ha quedado despu\u00e9s del trasvase de la misma cantidad hac\u00eda las botas m\u00e1s bajas. A continuaci\u00f3n, se deja en reposo durante un tiempo para que se integre el alcohol y luego se limpia el vino por decantaci\u00f3n. Al final del proceso y dependiendo de su destino y la crianza elegida, se puede a\u00f1adir m\u00e1s alcohol hasta llegar a unos 15% y en algunos muy espec\u00edficos llega a 18%.<\/p>\n<p>La crianza de Pedro Xim\u00e9nez var\u00eda seg\u00fan el destino final. Despu\u00e9s de filtrar y limpiar el vino, se embotella. El resultado es un vino en cierto modo espeso, de color \u00e1mbar oscuro, aromas complejos y sabor muy parecido a la miel. Con m\u00e1s crianza (m\u00ednima seis meses) todas estas cualidades intensifican y, con el paso de los a\u00f1os y bien conservado, un Pedro Xim\u00e9nez puede resultar espectacular. Es muy frequente encontrar Pedro Xim\u00e9nez con diez o m\u00e1s a\u00f1os en tiendas. Al envejecer, el color pasa a caoba oscuro y los m\u00e1s viejos dejan la copa totalmente te\u00f1ida. En boca es muy dulce sin ser empalagoso y recorre la boca dejando sensaciones sumamente agradables de nectar y miel. No hay una temperatura ideal para tomar Pedro Xim\u00e9nez, pero seg\u00fan el tipo, puede variar entre 8 a 12\u00baC o incluso de 12 a 16\u00baC.<\/p>\n<p>\u00bfCuando tomar Pedro Xim\u00e9nez? Francamente cuando te da la real gana. En t\u00e9rminos generales, es un acompa\u00f1amiento ideal para una amplia gama de postres; pasteles, tartas, helados, etc\u00e9tera. No obstante, combina perfectamente con platos principales tales como solomillo en salsa de reducci\u00f3n al 50% de Pedro Xim\u00e9nez, rodajas de berenjena fritas con miel o buen jam\u00f3n, y por supuesto para tomar con casi cualquier tapeo o a la hora del aperitivo.<\/p>\n<p>= = = = = = = = = =<\/p>\n<p>George H.
