Con una media aproximada de cinco variedades diferentes por cada una de las seis Denomina\u00e7\u00f5es de Origem Protegida de Azeites. Notas verdes y marcado amargor y picante. El aceite elegido, Terras Dazibo Bio, incluye la referida variedad Cobran\u00e7osa, predominante del norte, en un coupage junto con las variedades Madural y Verdeal. En la cata nos muestra sus notas herb\u00e1ceas de hierba fresca, romero, lavanda y almendras verdes; con boca de entrada dulce, seguida de un leve amargor y un picante tard\u00edo, interesante y persistente.<\/li>\n<li><strong>Variedad Galega, DOP Moura-Alentejo:<\/strong> , En el Alentejo existen tres DOP, Azeite de Moura, Norte Alentejano y Azeite Alentejo Interior. Los aceites alentejanos en general son suaves y dulces, con notas de frutos secos, manzanas y algunas notas de hierba reci\u00e9n cortada en los de cosecha temprana. Ang\u00e9lica es el nombre del aceite escogido, homenaje a la abuela del olivicultor Gon\u00e7alo Rosa da Silva y tambi\u00e9n se trata de un coupage donde la variedad Galega se expresa junto a la Cordovil y la Verdeal con intenso sabor, notable frutado con notas almendradas y ligeramente picante en el final de cata.<\/li>\n<li><strong>Variedad Arbequina, DOP Siurana \u2013 Tarragona- Catalunya:<\/strong> La DOP Siurana abarca varios municipios de la provincia de Tarragona, que incluyen la preciosa comarca del Priorat y del bajo Pened\u00e9s entre otras. La herencia cultural milenaria del aceite de oliva, ingrediente central de la dieta mediterr\u00e1nea, se muestra en estas tierras con destaque en la variedad Arbequina, que nos regala aromas de aceituna verde, menta y hierba fresca, aparecen tambi\u00e9n las frutas, como la manzana o el pl\u00e1tano. En boca destacan los sabores de tomate, nuez verde y un final de almendra integrado en un conjunto arm\u00f3nico, equilibrado entre el dulce, el amargo y el picante.<\/li>\n<li><strong>Variedad Picual, DOP Sierra M\u00e1gina \u2013 Ja\u00e9n- Andaluc\u00eda:<\/strong> Ubicada en la ciudad Patrimonio Mundial de la Humanidad que, junto con Baeza, es \u00dabeda en Ja\u00e9n, se encuentra la finca Cortijo Esp\u00edritu Santo, finca referente en Oleoturismo cuyos olivos de la variedad Picual respiran salud gracias a la defensa a ultranza que el olivarero Juan Molina hace en materia de cultivo ecol\u00f3gico.
